Are you looking for a tasty cupcake recipe to send with your child to school that isn’t filled with sugar? Me too. Too bad our schools don’t allow home made products sent in to school during parties. But that doesn’t mean that I can’t make a tasty sugar free lemon cupcake for Hayden when he gets out of school. I used NuNaturals PreSweet™ Tagatose instead of sugar for this recipe. PreSweet Tagatose is a naturally-occurring sweetener found in milk, fruits and vegetables. So you get everything that you need without the added “not sugar”taste. Tagatose happens to have the same natural taste as sugar. And its all natural!
Sugar Free Lemon Cupcakes with Sugar free Cream Cheese Frosting
CupCake recipe is adapted from Vanessa’s Lemon cake recipe at www.food.vanvalentine.com
Print a copy of the recipe
Ingredients:
Cupcakes:
8 oz butter
¾ cup NuNatural PreSweet Tagatose
1 teaspoon vanilla extract
4 eggs
4 tablespoons of Lemon juice
2 cups Flour
2 teaspoons baking powder
1 teaspoon salt
Frosting:
1 package sugar-free cream cheese frosting
1 ¾ cup milk
1 package cream cheese
1 container lite frozen whipped topping, thawed
Directions:
Preheat oven to 350 degrees
Mix the PreSweet Tagotose and butter until Creamy. It helps if the butter is warmed up slightly.
Add vanilla extract , eggs and lemon juice. Mix well.
In another bowl, mix flour, baking powder, and salt
combine mixtures together and mix well.
place in muffin tin (with or without cups) and bake for 15-20 minutes.
allow to cool before frosting
For frosting:
combine pudding mix and milk and let stand until it has thickened
beat the cream cheese until smooth
add pudding to cream cheese and mix well
“fold” in whipped topping
*This recipe makes 18 cupcakes. If you need more, you only need to double the recipe for the cake, not the frosting. the frosting will cover 36 cupcakes.*
