Recipe: Iced Oatmeal Cookies

When I was younger, I would die for some iced oatmeal cookies. I mean those soft baked ones that you could buy in the store? I could eat a pack by myself in a couple of hours. No sharing. So I had made it my goal to find some delicious cookies that I could enjoy and share the love of the cookies with my boys, and I found it. It isn’t too hard and you must make sure you have a blender or food processor. But you too can have some delicious iced oatmeal cookies made from your own oven.

Iced Oatmeal Cookies

Ingredients:

  • 2 cups old-fashioned rolled oats
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup (2 sticks) butter, softened
  • 1 cup light brown sugar
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Icing

  • 2 cups confectioners sugar
  • 3 tablespoons milk

Directions:
Preheat the over to 350 degrees. Spray baking sheets and set aside.

Place your oats into a processor and pulse about 10 times. I used a blender and just mixed half way through with no problems. Combine in a bowl with the flour, baking powder, baking soda, salt, cinnamon and nutmeg.

In an electric mixer, cream the butter and sugars. Add the eggs one at a time then add the vanilla. Add the flour mixture slowly and blend. Roll the dough into 2 tablespoon size balls and place on the baking sheets. Bake for 10-12 minutes (or until the bottom starts to brown). Let cool on the baking sheet for a couple minutes before transferring to a wire rack to finish.

Iced topping:
Mix the confectioners sugar and milk together in a shallow bowl (makes it easier for me to dip). Dip the top of each cookie into the bowl and let the extra icing drip off. Place back on the wire rack to set. Enjoy!

I am thinking about adding some raisins to the mix.. that sounds delicious! Let me know if you try this recipe and tell me how it goes.
