October 10, 2014 by Ashley T

I’m a mom who works at home but doesn’t always have as much time as I want to bake and cook all the time. Yeah, sometimes I’m just lazy but some days its just me from 7:30am til 10pm.. then you have to add in getting both boys to and from school, soccer practice (or a game) and any other things I have to do so sometimes I need a simple recipe to make something delicious. And duh, its pumpkin season!

Mix all ingredients for 1-2 minutes or unti all ingredients are wet. Pour the batter into the greased loaf pan.

Bake at 350 degrees for an hour. Use a toothpick to make sure the bread is fully cooked. Let cool for about 20 minutes before using a knife to loosen the edges to remove from the pan. Makes 12 servings.
