I was determined to come up with a gluten free meal option while using the Udi’s Gluten free products because I wanted to show my family that a gluten free meal can be super delicious. My husband and both my boys love eggs (of course) and I had a package of Udi’s plain tortillas so I decided to make a breakfast burrito. If you aren’t familiar with them, to me, its basically like an omelet in a tortilla.
This is what I used when making ours (and added some ham as a meat) You can add or subtract your own ingredients, just enjoy!
Gluten Free Breakfast Burrito
Ingredients:
- eggs (with milk or without; your choice)
- cheese
- mushrooms
- ham (if you’d like)
- Udi’s plain tortilla
Directions:
I used 1 egg per 2 tortillas since they are small. Pour your egg mixture into the pan. Add mushrooms and ham. Flip egg when you notice your egg is about 75% cooked. Add cheese after flipped. While the egg is finishing, warm tortillas on a flat pan flipping half way. Takes approx 5 minutes to warm. Cut the egg in half and add half to 1 tortilla. Wrap tortilla and enjoy.
