Crock Pot Pulled Pork

My husband LOVES pulled pork. I mean loves it. So I wanted to have a cost-effective way to make it other than buying those packages with the sauce mixed in already. After searching online and heading to the store, I realized its pretty easy to make and makes a lot for not too much money!

Ingredients

  • pork shoulder roast, about 4 pounds
  • 2 medium onions, thinly sliced
  • 1 1/2 cups water
  • 1 bottle (16 ounces) barbecue sauce, or 2 cups homemade sauce

Instructions

  1. Place half of the thinly sliced onions in bottom of slow cooker; add pork and water, along with remaining onion slices.
  2. Cover and cook on LOW for 8 to 10 hours or 4 to 5 hours on HIGH heat setting.
  3. Drain liquid from slow cooker; chop the meat coarsely and discard excess fat.
  4. Put the pork back in the slow cooker. Add barbecue sauce and chopped onion.
  5. If you’d like the sauce cooked in, cover and cook on LOW for 4 to 6 hours longer.
  6. Stir occasionally. Serve with warm split buns.
  7. Serves 8 to 10.

    I made crock pot BBQ Pulled Pork just the other day! After it's cooked and still hot in the pot, I add a couple of handfuls of finely shredded zucchini or carrot or yellow squash and stir into the meat (no need to keep cooking, just keep it hot for a minute or two.). No one who eats it notices at all. It does not change the flavor or texture of the BBQ meat, but it adds vegetables and fiber and extends the amount of meat.

      That is brilliant! Perfect for that time of year when everyone is trying to use up the million pounds of zucchini from their gardens!

    I just made some pulled pork recently, but this sounds a lot better than the way I made mine. I shred it and make all kinds of Mexican dishes!
