My husband LOVES pulled pork. I mean loves it. So I wanted to have a cost-effective way to make it other than buying those packages with the sauce mixed in already. After searching online and heading to the store, I realized its pretty easy to make and makes a lot for not too much money!

Crock Pot Pulled Pork

I made crock pot BBQ Pulled Pork just the other day! After it’s cooked and still hot in the pot, I add a couple of handfuls of finely shredded zucchini or carrot or yellow squash and stir into the meat (no need to keep cooking, just keep it hot for a minute or two.). No one who eats it notices at all. It does not change the flavor or texture of the BBQ meat, but it adds vegetables and fiber and extends the amount of meat.

I just made some pulled pork recently, but this sounds a lot better than the way I made mine. I shred it and make all kinds of Mexican dishes!
