Strawberry Muffins
( I got this recipe from Dinner, Dishes, and Desserts and changed it slightly for my taste)
Ingredients
- 1/2 cup Canola Oil
- 1 cup Milk
- 2 Eggs
- 1 tsp Salt
- 2 tsp Lemon Juice
- 2 tsp Cinnamon
- 1 1/3 tbsp Baking Powder
- 1 cup Sugar
- 3 1/2 cup Flour
- 3 cups chopped Strawberries
Instructions
- In a small bowl combine oil, milk, lemon juice and eggs. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
- Fill 18-24 muffin cups with batter. Bake at 375 for 16-20 minutes. Enjoy!
- This recipe was from another I got from a fellow baker. I had to adjust it a little bit for my liking. I LOVE it. But don't take my word for it, I have a bunch of co-workers who agree with me.
