New Food Friday- Strawberry Muffins

Strawberry Muffins

( I got this recipe from Dinner, Dishes, and Desserts and changed it slightly for my taste)

Ingredients

  • 1/2 cup Canola Oil
  • 1 cup Milk
  • 2 Eggs
  • 1 tsp Salt
  • 2 tsp Lemon Juice
  • 2 tsp Cinnamon
  • 1 1/3 tbsp Baking Powder
  • 1 cup Sugar
  • 3 1/2 cup Flour
  • 3 cups chopped Strawberries

Instructions

  1. In a small bowl combine oil, milk,  lemon juice and eggs.  Beat lightly.  In a large bowl, mix flour, salt, baking powder and sugar.  Toss in chopped strawberries and stir to coat with flour.  Pour in milk mixture and stir together.
  2. Fill 18-24 muffin cups with batter.  Bake at 375 for 16-20 minutes.  Enjoy!
  3. This recipe was from another I got from a fellow baker. I had to adjust it a little bit for my liking. I LOVE it. But don't take my word for it, I have a bunch of co-workers who agree with me.
