Its weird that I don’t eat Chicken and Dumplings more often considering it contains two of my favorite things to eat: chicken and biscuits (or bread). I can eat a roll with any meal so this type of recipe that combines some of my favorite ingredients is perfect. This recipes uses a crock pot, which you know is one of my most favorite cooking tools. Chicken and Dumplings

Ingredients:
- 4 boneless and skinless chicken breasts
- 2 1/2 cups chicken broth
- 2 tablespoons butter
- 2 chicken bouillon cubes
- 1 onion, chopped
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 cup peas (optional)
- 10 oz can of biscuits (add after everything else is cooked)
Directions:
Add all but the last ingredient to the Crock Pot as directed. Cook on low for 8 hours or on high for 4 hours.
Remove pieces of chicken breast and shred. Mine were tender enough to shred by using pressure from a spoon (since the chicken is too hot to touch). Add the shredded chicken back to the crock pot.
Break your biscuits into pieces and add to the crock pot. I cut each biscuit into 4 pieces, rolled into a ball, smashed it a little, then added it to the crock pot. Let cook on low for about an hour. The smaller you make them, the faster they will cook. Once the dough is no longer raw in the middle, serve.

I have tried this once with my old slow cooker. I should try it again. I normally bake the chicken, make the dumplings from scratch, but it’s so much more time consuming. This is a great hearty meal for a chilly day.

I tried this recipe with double cream of chicken soup. Yummy!
I have never tried using the canned biscuits in Chicken and Dumplings, or making it in the crockpot. I usually make the dumplings from scratch and cook them in the broth from stewing a whole chicken. Even though I love them my way, this would be great for a change and when I want an easier way to enjoy them. Thanks for the recipe!
